The Milk Road

Fiorella Baldisserri | Italy

In some Italian provinces of Emilia and Romagna and Mantua, nature and men, by using the appropriate timing, create an unique product known worldwide: Parmigiano Reggiano cheese.

The morning and the previous evening milk gets to the copper boilers where a slow succession of experience, innovation and tradition leads to the creation of parmigiano forms that will age from 12 to 54 months. The Parmigiano Reggiano Union faced big investments to ensure higher and higher animal welfare standards. Increasing the quality of life of those cows destinated to dairy production begins from the need of meeting the changing evolution of the international demand of ethical and sustainable food products. Today 1420 stalls (that is to say 58% of the farms representing 72.5% of the milk) and 200 dairy farms out of 305, joined the 2021-2023AnimalSustainability and Welfareproject. The Milk Road shows elements of everyday life combined to an Italian excellent production where man is a crucial part of nature in the searching of a possible cohabitation.
